Crunchy Rajma Chawal Veg Sandwich



Ingredients:

  • Brown Bread Slice - 4
  • Paneer - 2 thin slice
  • Onion - 1 medium , cut into rings
  • Tomato - 1 medium , cut into rings
  • Cabbage - 1/4 cup, chopped


For Tikki:

  • Boiled Rajma - 1/2 cup 
  • Boiled Rice - 1/2 cup
  • Potatoes - 2 medium, Boiled 
  • Onion-  1 medium, finely chopped

  • Beans - 1/4 cup, finely chopped 
  • Green Capsicum - 1/4 cup, finely chopped
  • Green chillies- 2, finely chopped
  • Tomato -  1 medium, finely chopped
  • Cumin Seeds - 1/2 tsp
  • Cumin Powder- 1/4 tsp
  • Garam Masala - 1/4 tsp
  • Red chilli powder - 1/4 tsp
  • Chat Masala - 1/4 tsp
  • Salt to taste
  • Breadcrumbs - 1/2 cup
  • Cornflour - 2 tbsp


For Mayonnaise:

  • Milk - 75 ml
  • Vegetable Oil - 150 ml
  • Lemon Juice - 2 tbsp
  • Black pepper powder - 1/2 tsp
  • Salt to taste


For Honey and Mustard Mayonnaise:

  • Mayonnaise - 3 tbsp 
  • Mustard sauce - 1/2 tbsp
  • Honey - 1 tbsp

Method: 

For Tikki:

1. Take rajma,rice and potato in a bowl and mash it coarsely.

2. Heat oil in a non stick pan over medium heat. Add cumin seeds and when starts cracking add onion,tomato,beans and capsicum. Fry the mixture for few minutes.

3. Now add mashed potato and rajma rice to the above mixture and mix well.

4. Add the dry ingredients ( chilli powder, salt, garam masala, chat masala, cumin powder) and mix well.

5. Shape the mixture in equal sized tikki.

6. Make the mixture of cornflour and water.

7. Dip the tikki into the cornflour mixture and roll over breadcrumbs.

8. Shallow fry the tikki on medium flame till they turn brown on both sides.

For Mayonnaise:

1. Whip milk, lemon juice and salt in a clean dry glass.

2. Add oil little by little and whisk continuously till all the oil is incorporated and the mixture becomes thick.

3. Add Black pepper to the mayonnaise and mix well.

For honey mustard mayonnaise:

1. Add honey and mustard sauce to the above prepared mayonnaise and mix well.

For Sandwich:

1. Grill brown bread in a griller with some oil from both sides.

2. Apply layer of Mayonnaise and Honey mustard mayonnaise and tomato sauce over a slice of bread.

3. Place tikki and paneer slice over it.

4. Garnish with onion rings, tomato rings  and chopped cabbage.

5. Serve hot with coffee or tea.
