4 medium Potatoes, boiled and mashed
- 4 medium size tomatoes paste
- 2 medium Onions, chopped
- 1 medium Green capsicum, chopped deseeded
- 1/4 small Cauliflower, grated
- 1/4 cup Green peas, shelled
- 1 tsp Ginger-Garlic paste
- 3 tbsp Oil
- 3-4 Green chillies, chopped
- 1 1/2 tbsp Pav bhaji masala
- Salt to taste
- 3 tbsp Butter
- 8 Pav
- Fresh coriander leaves, chopped
- Lemons, cut into wedges
Hot Bread Roll
Ingredients:
- 2 Big Potatoes (boiled and mashed)
- 7-8 Bread Slices
- Coriander leaves finely chopped
- Green chilies (chopped)
- Red Chili powder to taste
- 1/4th tsp Garam Masala powder
- Oil for frying
Method:
- Add salt, chili powder, gram masala, green chilies and coriander leaves to the mashed potatoes, mix well
- Take some water in a bowl and dip a bread slice for few seconds.
- Squeeze the water from the bread by pressing between palms gently.
- Place a tbsp potato mixture over the damp bread and roll and seal the edges of the bread in such a way that the filling does not come out from any part of the bread.
- Repeat the same process for making more rolls.
- Heat oil in a kadhai and deep fry on medium flame till golden brown.
- Serve bread rolls hot with green chutney and tomato sauce.
Potato Sandwich
Ingredients:
- 2 cup mashed potatoes
- 1/2 onion – chopped finely
- 1/2 tomato – chopped finely
- 1 small green chilly – chopped finely
- 1/2 tsp cumin seeds
- a few chopped coriander leaves
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder (optional)
- 4 slices of bread – brown or white
- Amul Butter or any other brand of Butter
- Sandwich Masala or Chaat Masala
Method:
- In a pan, heat some oil. Add cumin seeds. Then add onions. Fry the onions till transparent.
- Now add the tomatoes. Fry the tomatoes till they become soft and are cooked.
- Add the chopped green chilli. Add the all the spice powders mentioned above. Mix them well.
- Now add the mashed potatoes. Add salt. Mix the stuffing really well. Keep on stirring on a low flame so that the mixture does not stick to the pan.
- Cook for 5 minutes. Let the mixture cool before you start using it for the sandwich.
For making the sandwiches
- Apply amul butter evenly on the bread.
- Now apply the green chutney on the bread.
- Take the potato mixture and apply it on this bread. Sprinkle some sandwich masala or chat masala.
- Now cover this potato laden bread with another slice of bread, to which both butter and chutney has been applied.
- In a sandwich toaster or grill, toast or grill the sandwich till browned from both sides.
- Remove and apply some butter on top of the sandwich. The butter melts.
- Serve the sandwich hot with the green chutney and tomato ketchup.
Samosa
Ingredients:
For Cover:
- 1 cup all purpose flour (Maida)
- Water to Knead dough
- 2tbsp oil
- Little salt
- 1/4th tsp. Ajwain (optional)
For Stuffing:
- 3-4 Potatoes (boiled, peeled & mashed)
- 1/2 cup Green Peas (boiled)
- 1-2 Green Chilies (finely chopped)
- 1/2tsp Ginger (crushed)
- 1tbsp coriander finely chopped
- Few chopped Cashews (optional)
- Paneer (optional)
- 1/2tsp Garam masala
- Salt to taste
- Red chili powder to taste
- 1/2 tsp. Dry Mango powder( Amchur) (optional)
Method:
For Cover:
- Mix all the ingredients (salt, oil, ajwain) except water.
- Add a little water at a time.
- Pat and knead well for several times into a soft pliable dough.
- Cover it with moist Muslin cloth and keep aside for 15 minutes.
For Stuffing :
- In a bowl add mashed potatoes and all dry masalas (salt, chili powder, mango powder, garam masala) and green chilles, ginger and Mix well.
- Add green peas, cashews and raisins and mix well.
- Add coriander and keep aside.
To Proceed :
- Make small rolls of dough and roll it into a 4"-5" diameter circle.
- Cut it into two parts like semi-circle.
- Now take one semi circle and fold it like a cone. Use water while doing so.
- Place a spoon of filling in the cone and seal the third side using a drop of water.
- Heat oil in a kadhai and deep fry till golden brown (fry on a medium flame).
- Serve samosa hot with hari chutney, tamarind chutney.
Poha Recipe
Ingredients:
- 2 Cups Thick Poha (flaked rice)
- 1 chopped onion
- 1 Tsp. chopped green chilies
- 1 Pinch heeng
- ½ Tsp. Turmeric powder
- ½ Tsp. mustard seeds
- 2-3 Tsp. peanuts
- chopped coriander
- oil for seasoning
- salt to taste
- sugar a pinch
- 1 Tsp. Lemon juice
Method:
- Wash poha and drain water completely and leave aside for 5 minutes.
- To this poha add a pinch of sugar and salt to taste.
- Heat oil in a pan add mustard seeds, heeng, green chilies, haldi, onion. Cook for 5-minutes and then add peanuts. Stir for a second.
- Add poha and mix well and cover it for a minute.
- Garnish with namkeen and sprinkle lemon juice just before serving.
Vermicelli (semiya) Recipe
Ingredients:
- Vermicelli (semiya) - 180 grams (roasted)
- Onion -1 big or 2 medium
- Ginger - 1 inch piece finely chopped
- Green chilli -1-2 finely chopped
- Capsicum -1
- Cabbage -1
- Oil -3 tsp
- Water - 400 ml
For the seasoning
- Mustard seeds -1 tsp
- Urad dal - 1 tsp
- Hing/Asafoetida - a generous pinch
- Red Chilli - 2
- Curry leaves - little
Method:
- Heat oil, add mustard seeds, when mustard splutters, add hing, urad dal , red chillies and curry leaves.
- When urad dal turns golden brown, add onions, green chillies, ginger and saute till onions become transparent.
- Then add the finely chopped vegetables and saute till it is half cooked.
- Add 400 ml water and salt needed .
- When water starts boiling, add the roasted vermicelli.
- Cook covered on low flames stirring occasionally till it is done.
- Serve hot with any chutney or pickle.
Dhokla Chaat
Ingredients:
- Dhokla - 4-5 pieces & mashed dhokla (dhokla crumbs)
- 2 medium onions (finely chopped)
- 1 tsp soya sause
- 1/2 tsp musturd seeds
- 2 tbsp tomato ketchup
- 1/2 tsp garam masala
- 1/2 tsp chat masala
- 2-3 pinches hing powder
- 1 tsp lemon juice
- 2 green chillies
- salt to taste
Method:
- Heat oil in a pan, add musturd seeds, hing.
- Add onions, chilli and fry them till golden brown.
- Add soya sause, tomato ketchup to it and fry for a minute.
- Add garam masala,chat masala and salt as per taste.
- Add dhokla and dhokla crumbs and gently mix them together.
- At the time of serving add lemon juice.
- Serve hot with coffee/tea.
Bread Omelette
Ingredients:
- 2 eggs
- 4 bread slices
- 1 small onion, finely chopped
- 3 green chillies, finely chopped
- 1/2 tsp red chilli powder
- Few coriander leaves, finely chopped
- salt to taste
Method:
- Break an egg, beat it, add salt, green chillies, onions, red chilli powder and coriander leaves, mix well.
- Heat a pan and spray oil. Dip the bread pieces in the egg mixture and put in the pan.
- Cook till bread gets toasted.
- Serve hot with tomato ketchup.
Crunchy Rajma Chawal Veg Sandwich
Ingredients:
- Brown Bread Slice - 4
- Paneer - 2 thin slice
- Onion - 1 medium , cut into rings
- Tomato - 1 medium , cut into rings
- Cabbage - 1/4 cup, chopped
For Tikki:
- Boiled Rajma - 1/2 cup
- Boiled Rice - 1/2 cup
- Potatoes - 2 medium, Boiled
- Onion- 1 medium, finely chopped
- Beans - 1/4 cup, finely chopped
- Green Capsicum - 1/4 cup, finely chopped
- Green chillies- 2, finely chopped
- Tomato - 1 medium, finely chopped
- Cumin Seeds - 1/2 tsp
- Cumin Powder- 1/4 tsp
- Garam Masala - 1/4 tsp
- Red chilli powder - 1/4 tsp
- Chat Masala - 1/4 tsp
- Salt to taste
- Breadcrumbs - 1/2 cup
- Cornflour - 2 tbsp
For Mayonnaise:
- Milk - 75 ml
- Vegetable Oil - 150 ml
- Lemon Juice - 2 tbsp
- Black pepper powder - 1/2 tsp
- Salt to taste
For Honey and Mustard Mayonnaise:
- Mayonnaise - 3 tbsp
- Mustard sauce - 1/2 tbsp
- Honey - 1 tbsp
Method:
For Tikki:
1. Take rajma,rice and potato in a bowl and mash it coarsely.
2. Heat oil in a non stick pan over medium heat. Add cumin seeds and when starts cracking add onion,tomato,beans and capsicum. Fry the mixture for few minutes.
3. Now add mashed potato and rajma rice to the above mixture and mix well.
4. Add the dry ingredients ( chilli powder, salt, garam masala, chat masala, cumin powder) and mix well.
5. Shape the mixture in equal sized tikki.
6. Make the mixture of cornflour and water.
7. Dip the tikki into the cornflour mixture and roll over breadcrumbs.
8. Shallow fry the tikki on medium flame till they turn brown on both sides.
For Mayonnaise:
1. Whip milk, lemon juice and salt in a clean dry glass.
2. Add oil little by little and whisk continuously till all the oil is incorporated and the mixture becomes thick.
3. Add Black pepper to the mayonnaise and mix well.
For honey mustard mayonnaise:
1. Add honey and mustard sauce to the above prepared mayonnaise and mix well.
For Sandwich:
1. Grill brown bread in a griller with some oil from both sides.
2. Apply layer of Mayonnaise and Honey mustard mayonnaise and tomato sauce over a slice of bread.
3. Place tikki and paneer slice over it.
4. Garnish with onion rings, tomato rings and chopped cabbage.
5. Serve hot with coffee or tea.
